Gluten Free Grain Free Crackers (Dairy free, Egg Free, Nut Free)

Back in the day (ok, it hasn’t been that long) when my family followed an autoimmune diet, we really missed bread. Fortunately, we discovered plantains and our world hasn’t been the same. This recipe has been adapted from Paleo Mom ‘s plantain cracker recipe. If you have an autoimmune disease or follow an autoimmune diet, be sure to check out her website and Paleo Approach book. Her book is filled with scientific information on autoimmune disease and how to heal it, and her protocol really helped a lot of people to put their autoimmune disease in remission.
Did I tell you how much my children love these crackers? Every time the oven beeps, my two year old runs in the kitchen yelling (something that slightly resembles the word crackers) in the hopes that some hot and yummy crackers are coming out.
The good news is that they are really easy to make and need only three ingredients: Three Green Plantains, Coconut Oil, and Salt.
To make them, peel the plantains, cut them in cubes, and add them to your blender or food processor. Add about three to four tablespoons of coconut oil that has been melted or softened, and add a 1/2 tsp of salt. Blend until the plantains are smooth, like dough.
Cover a cookie sheet or a silicon mat like this one with parchment paper, and transfer the plantain dough to it. Spread it in thin layer, to cover the whole sheet.
Meanwhile preheat the oven at 350 degrees Fahrenheit. Bake the plantains for 30 mins or until golden brown. After cooling off, cut it in squares or the size you desire. You can also use it as a flat bread.
We love them just plain, but the children love when we add some jam on top. Their favorite is Bonne Maman jams, especially the cherry, blueberries, and strawberry flavors. Their jams are made in France, contains no artificial preservatives, and are made with real fruit.This variety pack has several of our favorite flavors, that you must try them! I don’t receive any monetary or product gains from Bonne Maman, we just love their jams that much.

- 1/2 Tsp. Salt

Preheat oven to 350 degrees F. Peel the plantains and add them to a blender or food processor together with coconut milk and salt. Blend the ingredients together until a smooth and thick mixture forms. Line a baking sheet with parchment paper. Transfer the plantain dough to it. Spread it in thin layer, to cover the whole sheet. Bake the plantains for 30 mins or until golden brown. Cut square sizes for crackers, or you can use it as flat bread. Serve with some of your favorite jam on top or eat them just plain. Serve immediately after cooling off.
