3 Ingredient Grain-free Tea Bread (AIP, Vegan, Top 8 free)

I grew up eating fresh bread at every meal, so when I gave up wheat and gluten, and then grains, it was painful. There were days in college when all I would eat were bread, butter and jam, and hot tea. When I discovered by mistake this soft and dense bread, my whole family squealed of joy. We were excited to have a grain free, gluten free bread we can eat with our favorite jam and sun-butter.
The main ingredient, as you might expect is…drum roll…plantains. When you find a good thing, you continue using it, right? For this recipe, you will need three ripe plantains. The yellow soft ones (but not black) will yield the best results for texture and taste. If the plantains when you touch them are not soft, they will be starchier and will make your dough drier. So you might need to add extra liquid, such as water or coconut milk to your dough. If the plantains are too ripe (black), they will still work, but your bread will have a stronger plantain taste (it will be also sweeter, which might work for you if you don’t want to add extra sweetener).
This is a really easy recipe, and all you need are plantains, coconut flour, and baking soda.
First, preheat oven at 350F. Next peel the plantains, cut them in chunks, and use your blender or food processor to blend them until smooth. Transfer the plantain mixture to a bowl, and add 1/2 cup of coconut flour and 1 tsp of baking soda, and mix until all is incorporated.
Line a baking sheet with parchment paper, and spread the mixture to about 1/4 inches thick.
Bake at 350 F for 20 mins.
After cooling a little bit, cut them into squares, and serve them plain or with your favorite topping like jam, fruit, hummus, etc.
It is best to eat it right away or the same day. If you want to make it ahead of time, you could freeze it, but fresh is best.

Hi Deborah, thank you for noticing the discrepancy and for letting me know . It is supposed to be baking soda, the recipe card had the wrong ingredient. It got chanced to the wrong one recently when we changed the recipe plug-in. So, I am so glad you notice it. If you end up making it, let me know what you think of it.
