Most of our desserts are gluten-free and vegan, because of wheat, egg, and dairy allergies. However, one day I decided to adventure and to bake this Almond Orange Cake (that contains eggs), for our date night… It was so easy to bake in comparison to gluten-free and egg-free cakes and desserts I have been making all this time, that it almost felt like cheating. Yet, it tasted amazing and it was moist and fluffy like a regular cake, while it was still gluten-free and dairy-free. The almond orange cake is actually originally a Moroccan recipe that was adapted to a more healthy allergy friendly one…. I love to try different dishes and desserts from other countries since some of them are allergy friendly by nature, and most of the time they are delicious.
Ingredients and Directions for this Gluten-Free Almond Orange Cake
This recipe only requires 4 main ingredients. Below is a list of things you need to make this gluten-free orange cake:
* Organic Oranges
*Organic Turbinado Sugar or other kind of sweetener
*Organic free range eggs
*Organic Vanilla extract (Optional)
*A note about Almond Flour and other nut allergies like peanuts and other tree nuts. Since, our son is allergic to peanuts and cashews, but not almonds, we had been using some almond flour in our baking. However, we don’t do it too often, mainly because of fear of cross-contamination. A lot of nut flours like almond flour is processed in the same facility with other nuts like peanuts or other tree nuts, so cross-contamination can happen and you wouldn’t want to risk that when other nut allergies are present. However, I found out that Honeyville Almond Flour is only processed in a facility that process the almond flour and nothing else. On their website, they sell other nut products, like peanuts, but they confirmed that their Almond Flour is processed in a separate facility. Of course, if there is a concern about cross contamination, please double check with the company before using it, since their process might change in time.
Directions for Almond Orange Cake
You will need about 3-4 oranges, 2 for the cake and 1-2 for decorating.
Preheat oven at 325 F degrees.
Peel 2 oranges, separate the individual pieces and add them to a pot with a little bit of water. Cover the pot with a lid and simmer the oranges and water for about 15-30 mins, until oranges soften.
Meanwhile, in a bowl add the eggs and sugar and with an electric mixer, mix the eggs and sugar until the mixture looks fluffy and double in size.
Add the almond flour, cinnamon, and baking soda and mix them in until all incorporated. The dough can get sticky, so you might need to use the electric mixer to have all the flour well incorporated, or you can wait to add the flour after you add the oranges.
After the oranges are cooked, drain the water and add the oranges to a blender, and blend until smooth.
Add the orange mixture and vanilla (if using) to the dough and mix well until all is incorporated.
Grease a 8 inch or 9 inch Springform cake pan and add the dough to it.
Bake at 325 F for about 40-50 mins until a toothpick comes out clean.
While the cake is baking, you can prepare the oranges for decorating the cake.
Cut 1 orange in thin circles. Remove the peel from each circle. Add them to the top of the cake.
Make the Orange Sugar Glaze
In a saucepan, add two tablespoons of Turbinado sugar, 2 tablespoons of orange juice, and 1/4 cup of water. Add the pan to the stove and cook under low heat until sugar is melted. With a tablespoon spread the orange sugar glaze over the cake.
Serve the cake warm or serve after it chill in the fridge for a couple of hours.

So… Can this be made with egg replacer, do you think? My boyfriend is vegan but this sounds SO good!
I actually tried to make it without eggs (because my son is allergic to them) and it didn’t turn too well. The oranges made the dough too wet. You might be able to do it, if you increase the flour amount. However, I made one without eggs, and replaced oranges with mashed banana and apples, and it turned out really good.
This sounds amazing!! Would it be okay to use honey as a sugar substitute??
I would think honey should be fine to substitute the sugar in the cake. Let me know if you try it and how it turn out.
