Cabbage is one of my favorite vegetable to make a meal from. It’s inexpensive, healthy, filling, and tastes really good. I know, I know, some of you can’t understand how cabbage can be someone’s favorite. You might just need to try this recipe, and it might grow on you. It also has amazing health benefits, so the more you can cook with it, the better. My children love this recipe, and sometimes they add their favorite sauce to it like organic ketchup or organic barbecue sauce. It might not be the most healthy option, but it helps eating a healthier meal. You can try the same for your toddler or teenager if they might not want to eat it; adding a favorite spice, condiment, or sauce might make it more attractive. I assure you that it will grow on them and they will love it without adds on.
White potatoes got a bad rap, when Paleo diet became popular. However, they provide vitamins and minerals like other vegetables. They are especially high in Vitamin C and Vitamin B6. They contain antioxidants and may improve digestive health and blood sugar. You do want to be sure you get organic white potatoes, since conventional ones are on the dirty dozen list, having high pesticides levels.
Ingredients and Directions on how to make this Healthy Fried Cabbage and Potatoes
Things you need:
Organic White Potatoes
Organic White or Red Cabbage
Mandoline – for shredding cabbage
Spices (parsley, oregano) – Optional
Fresh Tomatoes and Green Onion – for Garnish (Optional)
Directions to make this Healthy Fried Cabbage and Potatoes
Step 1
Wash and peel the potatoes.
Step 2
Cut them in small cubes.
Step 3
Wash cabbage and remove bad leaves. Shreds the cabbage using a mandoline. The mandoline helps shred the cabbage fast and very thin.
Step 4
Add olive oil to an iron skillet. Add potatoes and cabbage to the skillet. Sprinkle sea salt and cover with a lid. Cook under medium, low heat for about 20 mins, or until cabbage and potatoes are soft and a little crispy. Stir from time to time to be sure cabbage or potatoes doesn’t stick to the skillet.
Serve as it is, or add fresh tomatoes and green onions.
