Lately, I have been trying to incorporate more plant-based meals for my family. Since, we now can eat grains and legumes like rice and beans, it is so much easier to make plant-based meals, and still avoid our allergies.  Plant-based/vegan meals are most of time very nutritious and in the same time more affordable than meat based meals.

And this recipe has all those benefits. It can feed a whole family and have some leftovers, it’s very low cost, delicious, and nutrient dense.  It’s also one of the easiest full and nutritious meal you can make.

Ingredients and Directions for Thai Pineapple Fried Rice

 

 

Things you need to make this yummy Thai Pineapple Fried Rice:

 

 

Organic Brown Rice or White Rice

Fresh or Organic Can Pineapple

Organic Red, Yellow or Orange Pepper

Mushrooms

Red onion

Garlic

Salt

Olive oil

Sesame oil (optional)

Iron skillet

Saucepan

Mushrooms are great alternative to meat, and are high on nutrients. They are anti-inflammatory, high in selenium, potassium, and vitamin B, C, and D. A study done by  University of Western Australia discovered that eating mushrooms regularly can prevent breast cancer by 64%. Mushrooms had been used since ancient times for food and medicine.  They are also low in calories, cholesterol-free, and they are great  source of protein and fiber.

 

How to make the best vegan Thai Pineapple Fried Rice

Step 1

 

To make this Thai Pineapple Fried Rice, first cook the rice in a saucepan or Instapot.

Step 2

 

Meanwhile, cut the mushrooms, peppers, onions, garlic, and pineapple in small pieces/chunks.

Step 3

In an iron skillet add olive oil and the vegetables and pineapple and saute them over medium heat, until they are soft. Stir occasionally. If liquid forms from mushrooms and pineapples, don’t worry. The rice will soak up the water later.

Step 4

 

Add the cooked rice to the skillet, and continue to cook at medium heat. Stir often. If liquid forms from the vegetables and pineapple, let the rice soak up that first while cooking it together.

Step 5

 

After all liquid has been soaked, add 1-2 tablespoon of olive oil and 1-2 tablespoon of sesame oil.  If someone has allergy to sesame oil, you can replace it with extra olive oil.

It’s important to keep stirring while cooking at this time, since it is very easy for the food to stick.Cook another 5-10 mins.
