Making Gluten-Free,Egg-Free, and Dairy-Free Brownies can be difficult. However, now you have Brownies in a cookie version. Say YES to that… These cookies taste amazing and are great for dessert, but also to have as a snack or with a cup of coffee or tea in the morning. The best part is that they are really easy to make. My 11 year old makes them often for our family.
Ingredients and Directions for these Vegan Chocolate Cookies
Things you need to make these “brownie” vegan chocolate cookies:
Dairy-free Vegan Chocolate chips
Coconut milk or Water
How to make the BEST Vegan Chocolate Cookies
Step 1
In a bowl mix oat flour, arrowroot starch or tapioca starch, Turbinado sugar, salt, and baking soda together.
Step 2
Add the flax-eggs and olive oil. Mix all, until are all incorporated.
Step 3
Mix in the coconut milk or water and vanilla. The finished dough will be a little bit sticky.
Step 4
Add the chocolate chips. I use the Enjoy Life chocolate chips, they are amazing for allergies since they are free of the top 8 allergens.
Step 5
Line a baking sheet with parchment paper. Add some oil to your hands (the dough will be a little bit sticky and the oil will help not stick to your hands), and shape the dough in a cookie form, and add them on the baking sheet.
This recipe will make around 12 medium -size vegan chocolate cookies.
Step 6
Bake the cookies at 350 for about 10-12 mins.
Notes and Substitutions for these Vegan Chocolate Cookies:
Turbinado sugar can be replaced with regular sugar, coconut sugar, maple syrup, honey, or other sweetener you like to use . Each type of sweetener might slightly change the taste of the final cookies.
Coconut milk can be replaced by other type of plant-based milk, or just plain water. I made these vegan chocolate cookies very often with just water instead of coconut milk, and they still taste amazing.
Olive oil can be replaced with coconut oil.

Add the cocoa powder, and mix until all is incorporated.

Add in the sugar and salt.

Make 2 flax eggs by mixing 2 tbsp. of flaxmeal with 6 tbsp. of water. Add the flax eggs and olive oil to the cookie batter.

Mix in the coconut milk or water, than the chocolate chips.
