3 Ingredient Grain-Free Tea Bread

Ingredients

  • 3 yellow plantains
  • 1/2 cup coconut flour
  • 1 tsp baking soda

Instructions

  1. Preheat oven at 350 F.
  2. Peel the plantains, cut them in chunks, and use your blender or food processor to blend them until smooth.
  3. Transfer the plantain mixture to a bowl, and add 1/2 cup of coconut flour and 1 tsp of baking soda, and mix until all is incorporated.
  4. Line a baking sheet with parchment paper, and spread the mixture to about 1/4 inches thick.
  5. Bake at 350 F for 20 mins.
  6. After cooling a little bit, cut them into squares, and serve them plain or with your favorite topping like jam, fruit, hummus, etc.

Recipe Notes

It is best to eat it right away or the same day. If you want to make it ahead of time, you could freeze it, but fresh is best.
